
In the heat of summertime, I tend to gravitate towards fruit in one way or another, so if you ask me what my ideal summer dessert would be – hands down – it would be this No Bake Summer Berry Cake.
No Bake Summer Berry Cake
I don’t know about you, but turning the oven on in my house during the summertime immediately turns my kitchen into a sauna. This recipe requires no added heat, which makes me love it even more!
1 (14.4 oz.) box of graham crackers
8 oz. cream cheese, softened
2 (3.4 oz.) packages of vanilla instant pudding
2.5 c. cold milk
12 oz. cool whip
3 c. fresh strawberries, sliced
1.5 c. fresh blueberries
Beat softened cream cheese and dry pudding mixes together in a large bowl. I recommend using a hand-held or stand mixer to ensure it’s well-combined. Gradually beat in the milk.
Gently stir in the cool whip, saving a small amount to spread a thin layer across the bottom of 9×13 pan. Begin with a single layer of graham crackers, fully covering the bottom layer of whipped cream.
Spread a layer of the pudding mixture over the graham crackers, then top with a layer of blueberries and strawberries. Repeat these graham-pudding-berry layers until you reach the top of the pan.
Refrigerate for at least 4 hours, until the graham crackers have softened completely. Serve cold, and enjoy!
